This Detox Soup is the perfect healthy soup for a cold or dreary day.  The pureed onions added to the broth give it a delicious burst of flavor and a nice base to add the other ingredients to.  I love the hemp seeds, a great source of vegetable protein, and the crunch of the bean sprouts finishes off the bite perfectly.  If you want to add a meat to increase the protein of the soup, shredded chicken works great.  When I create recipes I like to make things that taste great, and not too difficult to make, and provide a lot of nutrition and I think this detox soup hits the spot!  If you make a variation of this detox soup let us know what you did, and your thoughts.  We love to hear from you! 

Pure Henry Ingredient Spotlight

Our ingredient spotlight in our detox soup is kale.  It is packed with nutrition.  Kale contains an abundance of vitamins especially vitamins A, K, C, and Folate. It is rich in minerals necessary for our bodies, too, mainly calcium, magnesium, and phosphorus.  Vitamin A and C are know to be strong antioxidants, and antioxidants are a great combative source for our bodies against aging and disease.  Aging of our skin, wrinkles, saggy skin, etc.  is accelerated by the oxidative stress created in our cells with too much UV exposure.   The dietary antioxidants in kale, such as,  Vitamin A and C have been show to directly combat these aging effects. (1) Not only will Kale keep your skin looking younger and your body healthier, but it will also help keep your mind sharper!   A study conducted showed that nutrients in kale can slow cognitive aging. (2)  It is apparent to me that kale is a health powerhouse and will help you glow from the inside out.  I say,  “bring on the kale!”

Detox Soup Recipe

  • I Tablespoon, olive oil, butter or Ghee
  • 1/2 Cup sweet onions chopped
  • 3 Cups of Vegetable broth
  • 1 to 1/2 teaspoons of salt 
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of black pepper
  • 3 bay leaves
  • 1/2 Cup of sliced carrots
  • 1 Cup of shiitake mushrooms sliced
  • 1 Cup of chopped kale
  • 1/2 Cup of hemp hearts
  • 1 cup bean sprouts
  • 1 teaspoon of rice vinegar 
  • The first step to prepare the detox soup is to chop the onions, carrots, kale, and mushrooms.   
  • Next, saute the onions with one tablespoon of butter until the onions become translucent.  
  • Puree the sauted onions with one cup of vegetable broth.  You can do this in a blender or food processor. 
  • Return the pureed broth mixture to the stove, add the remaining two cups of broth, and bring to a boil. 
  • Add the salt, garlic powder, pepper, and bay leaves.
  •  Add the chopped carrots and mushrooms.  
  • Cook until the carrots and mushrooms are soft, 8-10 minutes
  • Add the hemp seeds, and bean sprouts
  • Lastly, add the kale and just blanch it.  By just blanching it you retain more of the nutritional value of the kale.  Also,  I think it tastes better, too.   
  • Cook until all items are heated.  
  • Remove from heat and serve hot!
