I love pasta, and arugula pesto served with hemp pasta creates a healthy way to eat it!  It is a meal packed with nutrition and flavor.  The addition of arugula, walnuts, and flax seeds increases the nutrient level and puts a spin on traditional pesto. Arugula pesto is super easy to make. You simply place all the ingredients in a food processor or blender and mix.  It tastes great over hemp pasta.  Hemp pasta has a little bit of a nutty earthy flavor which is complemented by the rich flavor of the arugula pesto.  You don't need too much pesto to create a flavorful meal.  Another bonus is that hemp pasta has nearly double the amount of protein of regular pasta and less calories. You can serve this with chicken on top to add protein.  Sometimes, I will buy a rotisserie chicken and shred it up and add it to the top.  It is delicious.

Arugula is a nutritional powerhouse!  It provides your body with necessary vitamins and minerals you need for optimal health.  Two of the minerals with the highest content levels in arugula are calcium and magnesium, respectively.  Calcium helps maintain proper heart, muscle, and nerve functions, and strengthens bones, but it also plays a role in healthy skin.(1)(2)   Calcium helps maintain a healthy epidermis -the outermost layer of skin- and aids in proper skin barrier functions, too.(3)  Magnesium, the other potent mineral found in arugula has been shown to decrease inflammation in the body reducing the risk of many diseases, including cardiovascular disease. Vitamin K and Vitamin A are the vitamins with the highest content levels in arugula.  Vitamin A is detrimental if you do not have enough, but it can also be toxic if you have too much.  It is best to get your vitamin A through a nutritionally rich healthy diet.  A great source of Vitamin A is from leafy green vegetables such as arugula.  Vitamin A helps support the immune system by helping make the bodies response to infection stronger, which increases your bodies effectiveness in avoiding acute infections, as well as chronic illnesses.(6)  Studies have shown that dietary intake of Vitamin A is protective against many cancers, such as breast, skin, lung, prostate, and several others.(7)  Not only does it increase immunity helping you fight illness, but it also decreases inflammation which further protects you from disease.  

Arugula Pesto Recipe

  • 1 Cup of olive oil
  • 3 cups packed fresh basil
  • 1 cup packed fresh arugula
  • 3 teaspoons of minced garlic
  • 1/2 teaspoon of lemon juice
  • 1/2 teaspoon of lemon zest
  • 1/4 cup of freshly grated parmesan cheese
  • 1/4 cup freshly grated asiago cheese
  • 1 tablespoon of ground flax seed
  • 1/4 cup of walnuts
  • 1/2 teaspoon of salt

First add the olive oil and lemon juice to the blender or food processor.  Next add the basil and arugula, the minced garlic, lemon zest, parmesan cheese, asiago cheese, walnuts, and salt.  Start on a low speed until the ingredients start to combine, and then increase the speed until everything is evenly blended.  

Follow the directions on the hemp pasta to cook it properly.  I always like to add a little olive oil and salt to my water when I boil pasta.  I also like the pasta a little al dente.  

Once the pasta is cooked add about 1/4 cup of pesto per 1 cup of cooked pasta.  Mix and enjoy!
